Fresh Tomato Basil Sauce
Ingredients:
- 15 fresh tomatoes (Roma or vine-ripe), diced
- 1 large bunch fresh basil, chopped
- 4–6 cloves garlic, minced
- ¼ cup olive oil
- Freshly ground black pepper, to taste
- Salt, to taste (optional)
Instructions:
1️⃣ Prep Tomatoes
- Dice tomatoes (leave skins on for rustic texture or blanch & peel if preferred).
2️⃣ Cook Garlic
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and cook until fragrant (30 sec–1 min, do not brown).
3️⃣ Simmer Sauce
- Add diced tomatoes to the skillet.
- Season with black pepper (and salt if using).
- Simmer uncovered over medium-low heat for 20–30 minutes, stirring occasionally, until tomatoes break down and the sauce thickens.
4️⃣ Add Basil
- Stir in fresh basil during the last 5 minutes of cooking.
5️⃣ Taste & Adjust
- Add more pepper or a drizzle of olive oil if desired before serving.
