🥢 Sweet & Spicy Soy-Ginger Glaze / Marinade
📝 Ingredients
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp minced fresh ginger
- 1 tbsp minced garlic
- 2 tbsp chili sauce (e.g., sriracha or sambal oelek)
- 1 tsp red pepper flakes
- 3/4 cup chicken stock
- 2 tbsp cornstarch
- 2 tbsp water (for cornstarch slurry)
🍳 Instructions
To Make as a Sauce or Glaze:
- In a small saucepan, combine soy sauce, brown sugar, rice vinegar, ginger, garlic, chili sauce, red pepper flakes, and chicken stock.
- Bring to a gentle simmer over medium heat, stirring occasionally.
- In a small bowl, mix cornstarch and water to make a slurry.
- Slowly whisk the slurry into the sauce.
- Continue simmering for 1–2 minutes until the sauce thickens and turns glossy.
- Use immediately as a glaze, stir-fry sauce, or drizzle—or store in the fridge for up to 7 days.
To Use as a Marinade:
- Mix all ingredients
except the cornstarch and water.
- Pour over chicken thighs in a sealed bag or container.
- Marinate for
30–60 minutes (shorter if chicken is pre-brined).
- Remove chicken and cook as desired: grill, roast, or pan-fry.
🍽️ Pro Tips
- Add 1 tsp sesame oil for nutty aroma.
- For sweeter sauce, increase brown sugar to 3 tbsp.
- For a thicker glaze, reduce sauce for a few more minutes before adding slurry.
